Dear students and colleagues,

The Department of Campus Recreation – in collaboration with the Advisory Council on Campus Climate, Culture and Inclusion – has created Conversation Kitchen, a unique series of culinary workshops designed to explore the significant influence that food has in defining and shaping culture. Each free workshop will focus on two countries’ food characteristics, preparation and consumption. Chef Jessica VanRoo, Campus Recreation culinary director, will present a three-course menu with two dishes unique to each country and one dish shared or similar to both. Hosts representing the countries will be present during the workshop to discuss their food traditions and experiences. Participants will gain an understanding of each country’s food culture through the experience of sharing a meal among friends.

Chef Jessica VanRoo holds a Bachelor of Science in Culinary Management and a Certificate in Chinese Cooking from the Wei Chuan Cooking Academy in Taipei, Taiwan. She served as the assistant culinary director for Sur La Table, as well as a faculty member at Orange County School of the Arts, before joining UCI Campus Recreation in 2010.

Workshops will be held at the Anteater Recreation Center’s Demonstration Kitchen. A full three-course meal will be included.

Workshop 1: Japan & Korea Wednesday, March 8, 5:30-7 p.m. Participants will delve into the world of rice, green tea and fermented foods, while observing the importance of presentation. Register here

Workshop 2: India & Pakistan Wednesday, April 12, 5:30-7 p.m. Two countries known for their robust flavors and liberal use of spice, all connected by the traditional naan bread and sweet tea. Register here

Workshop 3: Cuba & Mexico Wednesday, May 10, 5:30-7 p.m. Both countries influenced by Spanish and indigenous flavor combinations, with rice and beans classically on the side. Register here

The Conversation Kitchen series also is supported by Illuminations, the Program in Religious Studies, the International Student Excellence Programs (ISEP) and UCI Libraries.
